When I was younger, I loved thick shakes – okay I still love thick shakes – but I long ago graduated to healthier choices, such as this Almond Joy- inspired frosty. Made with fresh almond milk, frozen bananas (for added creaminess), coconut, and a hint of chocolate, this frosty is a guiltless under-the-sun indulgence. Chocolate shavings and sweet coconut flakes are optional but highly recommended. You’re worth it!
Don’t second-guess the butter. Yes, it’s overkill. Yes, it’s ridiculously indulgent. Totally. I mean, banana bread is essentially cake, right? Well, if ever a time in history called for butter on cake, I’d say this is it. Ingredients 3 very ripe bananas, peeled $1.501/3 cup melted butter or coconut, canola, or vegetable oil Pantry⅔ cup brown sugar Pantry1 egg, beaten $3.50 for 121 teaspoon vanilla extract Pantry1 teaspoon baking soda Pantry1/2 teaspoon ground cinnamon PantryPinch of salt Pantry1 cup of all-purpose flour Pantry3.5 ounces dark (64-74% cacao) chocolate, chopped roughly $3 Recipe Serves 6-8 Directions Preheat the oven to 350°F and grease a 4x8-inch loaf pan. Line with parchment paper as pictured.In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir the melted butter or oil into the mashed bananas.Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.Gently stir in the chocolate chips and nuts, if using.Pour the batter into your prepared loaf pan.Bake for 50-55 minutes or until a toothpick inserted into the center comes out clean.Remove from oven and let cool completely.Gently remove the banana bread from the pan.Slice and serve, preferably warm with butter. Cook the lentils: Stir in the tomato paste, paprika, thyme, oregano, and some freshly ground pepper, and cook about 1 minute. Add the lentils and vegetable broth, scraping up any bits at the bottom of the pot. Add a good pinch of salt. Allow the mixture to come to a boil, then reduce the heat to low and simmer about 10-15 minutes or until the lentils are tender and the mixture is thickened. Once the lentils have thickened, tear the spinach leaves and add to the pot. Remove from the heat, and stir until combined. (If you find the lentil mixture is too thick, add a little water to thin it out.) Remove and discard the bay leaf. Taste for salt, adding more if needed.
