Better than average 'Gourmet Every Day' is 'Gourmet' magazine's entry into the '30 minute meal' / Rachael Ray domain of quick and easy cooking. This is not their first attempt, as they did a 'quick and easy entertaining' book a two or three years ago, which every reviewer correctly pointed out was neither quick nor easy. 'Gourmet' seems to have learned a few things with this book, as, at the very least, these recipes are all pretty easy (Quick depends on your level of kitchen skills).

Everyone knows poke with rice, but how about bread? This is a mashup of a Japanese egg sando with spicy tuna poke. Recipe Zucchini Ribbon Salad with Avocado-Scallion Dressing and Pepita-Cilantro Gremolata
2 slices sliced ham8 California grape leaves (chard leaves can be substituted2 tablespoon pitted kalamata olives2 tablespoon roasted red bell peppers from jar (I use Mezzetta), drained and patted dry1 egg½ cup milk1 teaspoon oregano4 slices white bread (you can use any bread, but these hold up best)½ teaspoon minced or pureed garlic * I use garlic from a jar3 teaspoon mayonnaise1 teaspoon lemon rind2 teaspoon honey mustard4 slices swiss cheese4 tablespoon feta cheese , very finely crumbled2 tablespoon deli-sliced Golden Greek pepperoncini ( I use Mezzetta) you could substitute any hot pepper/tamed or regular jalapenos
Pre-heat the oven to 200ºC/400ºF and place the bacon on a non-stick baking tray.
