Banana Splits - serves 4

Preparation - 10 minutes, Cooking time - 5 minutes

For the fudge sauce:
3 tbsp dark chocolate
3 tbsp butter
1/2 cup heavy cream
1/2 cup dark brown sugar
2 tbsp corn syrup

For the banana splits:
4 ripe bananas
12 scoops of ice cream
1/2 cup heavy cream, lightly whipped
12 glace cherries
1/2 cup chopped mixed nuts, toasted
8 fan-shaped wafers

Begin by making the fudge sauce: break the chocolate into a pan and add the butter, cream, sugar, and syrup.
Heat gently, stirring, until the ingredients are melted and well blended; remove from the heat, but do not allow to cool completely.

Cut each banana in half lengthwise and place in the banana-split dishes, pushing the halves apart.
Place 2 scoops of ice cream between 2 pieces of banana.
Spoon over the cream, then scatter the cherries on top. Drizzle on the warm sauce, scatter with the nuts, then push in the wafers and serve immediately.
