Cantaloupe
Soup
with
Blueberry
Papaya
Relish

For
relish:
1
ripe
papaya,
peeled
and
cut
into
1/2-inch
dice
1/2
cup
fresh
blueberries
1
tbsp
fresh
lemon
juice
2
tbsp
fresh
mint
chiffonade
For
soup:
1
lrg
ripe
cantaloupe,
peeled
and
coarsely
chopped
2
tbsp
fresh
lime
juice
1
tbsp
honey
Relish:
Combine
the
papaya,
blueberries,
lemon
juice,
and
mint
in
a
medium
bowl.
Let
sit
at
room
temperature
for
1
hour.
Soup:
Place
the
cantaloupe,
lime
juice,
and
honey
in
a
blender
and
blend
until
smooth.
Ladle
the
soup
into
bowls,
add
a
splash
of
seltzer,
and
top
with
the
relish.
