Bread

yellow
or
white
cornmeal
1
tsp.
salt
1
tbsp
butter
or
margarine
3
eggs,
separated
1
1/2
cup
shredded
cheddar
cheese
1
cup
milk
1
tsp.
baking
powder
pinch
of
cayenne
Mix
in
med.
bowl,
cornmeal
and
salt.
In
medium
pan,
bring
2
c.
water
and
the
butter
to
a
boil.
Add
to
cornmeal
mixture,
stirring
with
a
whisk.
Add
cheese
and
stir
until
melted.
Add
milk
and
beat
until
smooth.
Cool
Preheat
oven
to
375º
Lightly
grease
2
qt.
casserole.
In
med.
bowl,
with
mixer,
beat
egg
whites
until
stiff
peaks
form.
Beat
egg
yolks
in
small
bowl
until
thick
and
light.
Fold
whites,
yolks,
cayenne,
and
baking
powder
into
cornmeal
mixture
until
combined.
Turn
into
prepared
casserole.
Bake
55-60
min.
or
until
puffed
and
golden.
Serve
hot,
spooned
from
casserole,
with
butter.
