flour

Cajun
seasoning

Preheat
the
oven
to
425
F.
Rub
the
chicken
skin
with
the
oil.
Place
the
flour,
Cajun
seasoning,
cayenne
pepper
and
salt
ina
large
bowl
and
mix
well
together.
Toss
the
chicken
pieces
in
the
flour
until
lightly
coated.
Place
the
chicken
on
a
wire
rack
and
top
of
a
baking
sheet.
Cook
the
chicken
for
45
minutes
until
well
done
with
a
good
crispy
skin.
Serve
hot
and
eat
with
your
fingers.
