butter

tbsp.
virgin
olive
oil
1/2
onion,
chopped
1
1/2
cups
rice
1/4
cup
milk
1
tsp.
nutmeg

tbsp.
Parmesan
cheese
Salt
and
pepper
(to
taste)
Wash
the
spinach
and
chop
into
small
pieces.
Heat
butter
and
olive
oil
in
heavy
soup
kettle
and
cook
spinach.
Add
chopped
onion
and
mix.
Add
rice
and
toss
constantly
until
grains
turn
light
gold.
Add
milk,
nutmeg,
salt
and
pepper
and
Parmesan
cheese.
Cook
until
absorbed.
